According to my analysis, the dwarves, gnomes and halflings are native to our world just like us, they appeared during the great wars that allowed the unification of our continent under same banner, the elves and eastern humans are outsiders, with former coming through something called ard gaeth, whose knowledge the elves had forgotten, making them unable to travel to another world, as for easterm human, they came through the conjunction of spheres, the same ones that brought monsters to entire world, but in east it also brought humans of different world.
Tell me about each race.
The gnomes are ingenious tinkerers, they scientific knowledge while far behind ours, they are undeniably what we call early mechanics and early engineers. Dwarves are miners and craftsmens, their knowledge of alloying is primitive as there is no concept of periodic table in east, and dwarves are reliant on supernatural metals that we reserved only for high-tech gadgets and machines or for emergencies. Despite this, in compasion to a traditional metallurgists, their goods are of top-notch.
The gnomes seems to have potential for technology, provided if they get right knowledge, as for dwarves, their alloys are primitive and sometime rely on supernatural metal, but they are without the doubt the master blacksmiths and craftsmen, they just need right knowledge, especially a periodic table, if they want to become a true metallurgist.
The halfings are youngest of natives, they are peaceful beings who prefer carefree lives in their huts and are good in agriculture, better than eastern humans but still far behind than ours.
Sounds like good farmers but they need modern agricultural and botanical knowledge if they want to turn farming into real business rather than hard labour.
Elves came from other world though ard gaeth instead of conjuction of spheres, sadly they lost the knowledge to use ard gaeth. Elves are prideful race, they are called arrogant, but perhaps it was due to their moral and discipline as eastern humans are very wild, which might explain their past harshness towards them. The elves are great herbologist, traditional doctor, has better understanding of magic and nature, they speak in elder speech, one of the many languages which also amplify spells, if recited in elder speech, they live in harmony with nature, they opposed the harvesting of resource more than what is needed, and they dislike deforestation with no reforestation or any other form of nature restoration method afterward.
Sounds like traditional but great doctors and botanists, as for their stance with nature, it sounds like a common sense and as for their harshness to eastern human, it sounds like discipline rather than insult, despite their status as outsiders, such disciplined folks are most welcome in our land if they wish to move here.
The last is eastern humans, they just like us with minor difference in biology, also unlike us who belonged to this world from start, they came from the cosmic event that brought the monsters. Sadly, given their nature it is not wrong to call them another monster.

Because they are very chaotic and barbaric, while our ancestor were same, they weren't this bad, in fact the moment our kind become more civilized we shed our barbarism as time passes by, but in their case it is opposite as they are becoming more barbaric, the claim themselves as civilized but even an idiot can tell they are opposite of what they claim themselves to be.

Eastern humans are religious just like our kind used to be, until we become atheist as science and technology progressed, we didn't reject god, but cannot declare a god real without evidence, which is why we no longer goes to temples or churches, and demolished them, though kept the knowledge of discontinued religions, just in case if they become valid later. However in east the reigions are seen as ultimate truth and they stuck to religious beliefs and traditions and never moved forward.
That doesn't sound wrong, I mean being religious is not bad thing, they will eventually embrace the science, and will either stop following the religion or become moderates.
Only if those religion are normal religions, while older ones in east are acceptable like cult of Melitete, cult of Freya, monotheistic cult of ofir, the cults of druids and so on, there are the religion that seemed like propaganda or utter nonsense, there is a imperial cult of great sun, which sounds more like propaganda than religion that the empire in south of eastern kingdom use to justify their invasion to other nations on other hand there is a religion that seemed for like mad cult than a true religion.

The cult of eternal fire, they worship fire as holy object when it just merely an mundane energy that can be used by anyone, they say fire drive away evil forces when it just light the area, cook food or burn something.
Sounds like childish religion, but it doesn't look like mad cult.
That's because you don't the worst, they are xenophobic, they persecute anything the seemed alien, mages, mutated peoples, non-humans, alchemists and anything that looked unnatural is treated same as monster, unlike the cleric of other religion, who atleast tried to help, the cleric of eternal fire gave nothing but empty promise, they secretly deal with illicit substances or work with goon and criminals, they backstab those who helped the people like mages or mutated people called witchers, they defame those who truly helps and make themselves seen as true saviors when they infact did nothing, they often take credits for work done by others, they are power hungry, oppress innocents and those who seen through them like wise people or scholar are branded as heretics by cultists, they say lies after lies to make themselves seen as saints while those who are doing real work are seen as blasphemers, and incites the mob against them, you used their pitchforks against their real saviors. To make the matter worse they even resort to scapegoating to drive away any suspicions, they even says stuffs like non-humans bringing misfortunes or mages polluting the air, and they even put blame on anything alien for bad harvest or drought, the things that literally makes no sense.
The whole court become silent, they wondered what kind of madness is this, how could such religion even exist.
